Sweet and Sour Meatballs Recipe (Oven or CrockPot!) - Oh Sweet Basil (1)

Easy Sweet and Sour Meatballs Recipe

One of the first recipes that Cade and I learned in our little cooking class we took in college was a homemadesweet and sour sauce. I’ve been wanting to make it into sweet and sour meatballs for years, but I always got distracted. I’ve finally busted out the recipe and it was such a smart move because these babies are oh so yum!!

In that class, we learned a lot about food, sanitation, and that Cade and I cook totally different. Let’s just say that I tend to be a bit better with multitasking — love you anyway, Cade!

But back to the food, which is the most important. These Asian meatballs can be baked or stuck in the slow cooker for 3-4 hours. You can even just whip up the sweet and sour sauce for meatballs and throw that in there too.

Sweet and Sour Meatballs Ingredients

I know the ingredients list for these sweet and sour meatballs may seem lengthy, but I promise each ingredient is necessary. Here’s what we use in these Asian meatballs:

  • Ground beef
  • Panko bread crumbs
  • Dry minced onion
  • Egg
  • Milk
  • Ground ginger
  • Salt and pepper
  • Canola oil
  • Bell peppers
  • Garlic
  • Onion powder
  • Rice vinegar
  • Ketchup
  • Low-sodium soy sauce
  • Brown sugar
  • Sesame oil
  • Mandarin oranges
  • Cornstarch
  • Water

Can I Use Ground Turkey Instead of Ground Beef?

Absolutely! Turkey is leaner than ground beef, so the sweet and sour meatballs might end up a little dry or crumbly. In which case, I would increase the coconut milk to 1/3 cup to keep the Asian meatballs tender and juicy.

How to Make Sweet and Sour Meatballs

This sweet and sour meatballs recipe is essentially a dump and stir recipe. Seriously, it’s so simple! Here’s how to make Asian meatballs:

  2. Shape the meat mixture into balls, then bake until cooked through.
  3. Meanwhile, stir together the sweet and sour sauce ingredients in a saucepan.
  4. Bring the mixture to a boil and cook until thickened.
  5. Once the meatballs are baked, gently toss with the sweet and sour sauce and serve.

How to Make CrockPot Sweet and Sour Meatballs

Want to make these Asian meatballs in a CrockPot? Shape the meatballs, then place in a CrockPot. Pour the sweet and sour sauce over top, then cook on HIGH for 3 to 4 hours.

Why Did My Meatballs Fall Apart?

One of the most asked questions with meatballs is, why do meatballs fall apart? Totally understandable. Meat that has been ground up needs a binding ingredient to bring it all back together.

You absolutely should have some kind of carb and milk in addition to the egg. Its’ called a panade, and youonly need about 1/2 cup of bread crumbs per 2 pounds of meat, give or take. But the point is, bread and milk are going to keep your meat juicy and wonderful as well as act like a glue so don’t skip it.

Tips for Making Sweet and Sour Meatballs

When seasoning these Asian meatballs, be sure to use 1 teaspoon of salt per pound of meat. If you use less salt than this, it’s likely you’ll wind up with bland sweet and sour meatballs.

Struggling to keep your Asian meatballs round? Use oil for rolling! I learned this on a cooking show. Place a little oil on your hands and roll ’em up! In fact, I put the oil on a dish and dip the meat in it and roll whenever I need a little more oil. The oil shines the meat up all pretty, but it also helps the meat smooth together in your hands so you avoid making clumpy, overworked meatballs.

Speaking of overworked sweet and sour meatballs, I mentioned this already but it’s almost always because you over mixed the meat. Ground meat needs to be handled gently and to a minimum. The more you mix the meat, the tougher and more rubbery it becomes. I tend to use my hands to ensure I don’t keep mixing, because who wants to hang out in raw meat? It’s also a good idea to stir all of your mix-ins together before adding to the ground meat.

Why are my homemade meatballs hard? ›

More Reasons Your Meatballs are Hard

Sticky hands can result in an overworked farcemeat. Too much time spent forming the balls can also make them tough, and you're more likely to overwork them if you can't get them off your hands.

Is it better to cook meatballs in sauce or oven? ›

I find that baking them and then finishing them in the sauce is the best method. Baking them ensures even cooking and browning as well as good flavor development. Throwing them into the sauce for a few minutes before serving flavors the sauce and keeps the meatballs moist and delicious.

Is it OK to put raw meatballs in sauce? ›

Yes. If you have a tomato sauce already cooked, you can add it to a slow cooker and place in your uncooked meatballs. You can also add some Italian sausage which go great with meatballs and pasta.

Should I put an egg in my meatballs? ›

You only need a small amount of egg – it's there only to help the cooked meatball retain its shape, and shouldn't detract from the meat's flavour or texture. Filler ingredients like breadcrumbs or flour are important too because they stop the meatballs becoming dry.

What is the secret to tender meatballs? ›

Consider the other ingredients.

Just ground meat and seasonings will yield only mediocre results. Egg and breadcrumbs are common mix-ins to add moisture and tenderness. Another binder option that people swear by is a panade, which is fresh or dry breadcrumbs that have been soaked in milk.

Why do you put milk in meatballs? ›

When it comes to adding liquid to meatball mixtures, milk is often used for its versatility, depth of flavor, and richness. Without the use of milk, you may be faced with a plate of dry meatballs. Milk adds a certain level of moisture that helps produce perfectly tender meatballs.

What do you put in meatballs so they don't fall apart? ›

Add a lightly beaten egg, but not too much. Egg acts as a binder for the ingredients, but you only need a small amount. One small egg will do for one pound of minced meat. Alternatively, if you're following an egg-free diet, you could soak fresh bread in milk, squeezing out any excess milk, to use as a binder.

Why do my meatballs fall apart when I cook them? ›

Because meat shrinks when cooked, mince proteins are likely to separate and crumble unless bound together. Whether it's breadcrumbs or egg (or both), or simply salt, binding the mince is a crucial step in maintaining the softness of your meatballs while preventing them from falling apart.

What does baking soda do to meatballs? ›

Baking soda acts as a meat tenderizer by changing the physical composition of meat fibers. It raises the pH levels on the surface and makes it tougher (pun intended) for the proteins in the meat to bond.

Do meatballs get more tender the longer they cook? ›

Tenderizing the Meat:

As the collagen in the meat dissolves over time, it transforms into gelatin, which not only adds a silky texture to the sauce but also contributes to the overall richness and depth of flavor. The longer the simmer, the more tender and succulent the meatballs become.

Why aren t my meatballs flavorful? ›

Start with higher-quality meat.

The most important shortcut to making great meatballs is to upgrade your meat. In fact, great meatballs probably aren't attainable without starting from quality meat. No amount of kitchen sorcery can substitute for what a fresher, better package of chuck beef can bring.

What's the best way to bake meatballs? ›

Baking them at 350 degrees Fahrenheit for 20 minutes should do it. I bake turkey meatballs for 15 minutes, and bake beef/pork ones for 20–25 minutes to ensure they're cooked through. If you need the drippings to make your sauce, you can scraped them out of the broiler pan bottom.

Is it better to bake meatballs at 350 or 400? ›

In an oven preheated to 350 degrees F, these meatballs should be fully cooked through and evenly browned in about 30 minutes. An instant-read thermometer inserted into the middle of the meatball should read at least 165 degrees F.

Should meatballs be covered when baking? ›

Covering them with foil can help when reheating, but you will still want to remove it during the last few minutes of cook time in the oven. How do you keep meatballs moist when baking?
