We just love roasting zucchini (my 6 year old loves it, too). Sliced, with a little olive oil, minced garlic and rosemary, broiled for 5-10 minutes. Delicious!

Hooray for the letter “Z” and for zucchini. We just got our first ones in the garden and I made bread out of it, so yummy. It’s not the most healthy recipe so I’m glad to see the whole wheat one here and will try it. All the other ideas look great too. Thanks for all work you put into the alphabet food ideas. You did great with them.

Is the zucchini cake really supposed to be baked in a loaf pan? It seems like a lot of batter.

It is Shawna! But you can certainly separate it into two pans. We like a tall loaf I guess. 🙂

Yeah, and make it into bars? It actually took me 90 minutes to make some regular zucchini bread the other day! So, ha ha.. it probably is too much batter!!
