This Quiche Lorraine recipe is filled with eggs, lots of cheese, and tasty bits of bacon, all cooked into a flaky pie crust. It’s breakfast in a pie, and it’s too good to resist.

This French-inspired dish is the perfect savory breakfast recipe. I don’t always want to fill up on sugar first thing in the morning (only sometimes), so I love having recipes like this for days when I want something hearty and flavorful. It also makes a great lunch with a nice side salad to add in some greens. And of course it fits in perfectly for Mother’s Day brunch, Christmas brunch, or Easter Brunch!

This isn’t one of those 30 minute recipes, but don’t let that scare you. It’s really not complicated and it’s definitely worth the extra time (let’s be honest, an hour isn’t that long for a delicious meal). I’d recommend this for a weekend breakfast or brunch, OR you can make it the day before and reheat it in the morning.

Here is a basic overview of how to make this Quiche Lorraine recipe:

  1. First you get the pie crust set up. It’s pre-made but you will have to bake it.
  2. Then you move on to the filling. Cook the bacon & mix it in with the cheese.
  3. Next, it’s time to whisk the eggs and cream together.
  4. Now you can assemble the quiche by alternating layers of the cheese/bacon mix and the egg mixture.
  5. Finally, bake the quiche for 30-45 minutes at 375°F.

Ingredients

  • 1 9-inch refrigerated pie crust
  • 8 strips bacon
  • ½ cup freshly shredded Swiss cheese
  • ¾ cup freshly shredded Gruyere cheese
  • ¼ freshly grated Parmesan cheese
  • 5 large eggs beaten
  • 1 cup heavy cream
  • 1 cup half-and-half
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground black pepper
  • ½ teaspoon kosher salt

  • For ease in rolling out, remove pie crust from refrigerator 20 minutes before using.

  • Preheat oven to 400°F. Fit the pie crust into a 9-inch pie plate, cover, and rest in the refrigerator until the oven has preheated.

  • Pre-bake the store-bought pie crust according to package directions (approximately 10 minutes); set aside to cool.

  • While crust bakes, prepare the bacon by cutting the strips into ¼-inch slices. Place the bacon in a cold skillet set over medium-low heat and cook until crisp; drain on a paper towel-lined plate.

  • Lower the oven temperature to 375°F.

  • In a medium bowl, combine the Swiss, Gruyere, and Parmesan cheeses and cooked bacon. Toss to mix.

    ½ cup freshly shredded Swiss cheese, ¾ cup freshly shredded Gruyere cheese, ¼ freshly grated Parmesan cheese

  • In a different medium bowl, whisk together the eggs and add the cream, half-and-half, nutmeg, black pepper, and kosher salt.

    5 large eggs, 1 cup heavy cream, 1 cup half-and-half, ¼ teaspoon ground nutmeg, ½ teaspoon kosher salt, ¼ teaspoon ground black pepper

  • Sprinkle the cooled crust with half the cheese/bacon mixture, pour half the egg/cream mixture on top, sprinkle with the remaining half of the cheese/bacon mixture, and finish with the remaining half of the egg/cream mixture.

  • Bake at 375°F for 30-45 minutes or until set in the middle. Cover the crust edge after 30 minutes to prevent burning.
