I fill tortillas with Tator Tots, scrambled eggs,and bacon, see my oven fried bacon. Next, I covered everything with homemade sausage gravy. Because this tortilla is filled with several different things, it is a good recipe to have kitchen helpers.

Although my family tries to eat healthy during the week, we like to splurge a little on the weekends. I enjoy cooking and eating breakfast at the table together.I believe the secret to building stronger families that stick together, communicate more, and love each other is to cook together, eat around the table together, play together, vacation together and share God’s love.

I encourage you to cook your weekend breakfast with your family, especially your teenage boys and girls. They will be gone before you know it. My teenage sons enjoy preparing breakfast. I love having them in the kitchen. I know they are cooking because their favorite food is bacon, but at least they are in the kitchen.

On a personal note, today is my husband’s birthday. Happy “50th” Birthday Jerry! It is hard to believe this August we will be married 30 years. We have been through lots of extremely difficult times. I am so glad you were with me through it all. I will love you forever!

Ingredients

  • Flour Tortilla
  • Tator Tots, baked
  • Scrambled Eggs
  • Bacon
  • Sausage Gravy - See recipe on this post

Instructions

  1. Bake the Tator Tots according to the package
  2. Scramble your eggs
  3. Cook bacon - See my oven fried bacon recipe below.
  4. Cook the sausage Gravy - See recipe below
  5. ASSEMBLE THE BREAKFAST BURRITO
  6. Add the tator tots, eggs, bacon, and sausage gravy to the flour tortilla
  7. Wrap up tightly and enjoy!

Sausage Gravy

Ingredients

  • 1 pound ground sausage
  • ¼ cup flour
  • 4 cups milk
  • salt and pepper as needed

Instructions

  1. Brown 1 pound pack of sausage and leave it in the skillet. Do not drain the grease.
  2. Add ¼ cup flour and mix in with the sausage until well coated.
  3. Slowly add 4 cups of milk and whisk constantly.
  4. If the gravy sits and becomes to thick add a couple TB’s of milk.
  5. Salt and pepper as needed

Oven Fried Bacon

Ingredients

  • Preheat the oven to 375 degrees F.
  • Take a large sheet pan with a lip and line it with heavy-duty aluminum foil. Be sure to cover the edges. I usually build a wall with the foil around the lip of the pan.
  • Arrange the bacon in the pan. It is best if the bacon does not touch each other. You can put the bacon directly on the foil or use a wire rack.
  • If using a rack, spray the rack with a cooking spray and place it on the foil.
  • Bake for 7-8 minutes.
  • Turn the pan completely around (very important step).
  • Bake for another 7-8 minutes.
  • Remove bacon to a plate covered with paper towels.
  • Adjust cooking time accordingly, depending on how crispy you like your bacon. We all like our baking cooked differently. I usually take it out of the oven and get several pieces out for my husband and then return it back to the oven for another 10-12 minutes. The rest of the family likes our bacon crispy.

  2. These look amazing, and you make your sausage gravy very similar to what my dad cooks, only difference is he puts a little cayenne pepper and sage in his. We have to watch him when he puts those in because he likes things spicier than we do, or he will overload it with that. I will definitely be trying this.
